6、esol wurden als aromastoffe identifiziert, die aus dem citral hervorgehen. im gaschromatogramm trat auberdem noch p-cymen auf, das aber nicht im ,sniffingport wahrgenommen wurde, p-methylacetophenon, o- und p-kresol zeigten wesentlich niedrigere geruchsschwellen (2,7 10,8; 0,7-2,7; 0,3-1,0 ng/1 luft

7、) als c,p-dimethylstyrol (665-2660 rig/1 luft). die reaktionen, die zum p-methylacetophenon ffihren, werden diskutiert.die wichtigsten aromastoffe des/itherischen ols von zitronen (citrus limon) 1. citral ist s/lure- und sauerstoffempfindlich. semmler 2, der geranial als komponente des citrals ident

8、ifiziert hatte, teilte bereits 1891 mit, dab geranial in gegenwart von sfiuren relativ schnell cyclisiert und in p-cymen iibergeht. durch den abbau von citral wird aber nicht nur die intensitilt des zitronenaromas gemindert, sondern er ffihrt auch zu unerw/inschten aromastoffen 3. aufgrund der grobe

9、n bedeutung yon zitronen61 ffir die aromatisierung von getrinken, stib- und backwaren, die s/iuren enthalten, wurde der protonenkatalysierte abbau des citrals eingehend untersucht 3-10. von den identifizierten zwischen- und endprodukten sollen p-cymen, ,p-dimethylstyrol, geraniums/lure, piperitenon, 2-hydroxy-p-cymen und p-cymen-8-ol an dem aromafehler beteiligt sein, der beim abbau von citral entsteht, doch wurde diese annahme bisher nicht durch eine sensorische bewertung gestfitzt.
