1.請(qǐng)盡量選用含銅量低的食物原料,以減少銅在體內(nèi)的蓄積。附表僅列出常用食物含銅量,表中數(shù)據(jù)來源于《中國(guó)食物成分表(2002)》《中國(guó)食物成分表(全國(guó)分省值》及《肝豆?fàn)詈俗冃浴返扔嘘P(guān)圖書資料,供肝豆?fàn)詈俗冃曰颊呒凹覍俪醪絽⒖肌S袟l件者還可以進(jìn)一步參閱《中國(guó)食物成分表(全國(guó)分省值》,結(jié)合食物生產(chǎn)地和食物含水量等因素,綜合分析判斷選用含銅量低的食物原料。

2.一般干燥食物含銅量<0.3mg/100g的可食,0.3~0.5mg/100g的少食,>0.5mg/100g的禁食,而新鮮含水量高的食物含銅量<0.06mg/100g的可食,0.06~0.13mg/100g的少食。>0.13mg/100g的禁食。食品原料建議主要選用精白米、特一粉或富強(qiáng)粉、鮮牛奶、雞蛋白、淡水魚、淺色蔬菜、淺色水果、色拉油及純凈水或蒸餾水等。銅的攝入量除了和原料的含銅量有關(guān)外,也和飲食的多少直接有關(guān),即進(jìn)食越多則攝入越多。

3.禁食動(dòng)物內(nèi)臟和血、蝦蟹類、貝類、軟體動(dòng)物、龜鱉類、豆類及其制品、干果、堅(jiān)果類、真菌類(香菇等)、藻類(紫菜等)、野菜及深色蔬菜,禁食含銅量高的中西藥(如蜈蚣、全蝎、僵蠶、龍骨、牡蠣及蜂產(chǎn)品)。脫水蔬菜及咸蔬菜要少食。醬油等調(diào)味品和香料一般含銅偏高,可用少許調(diào)味而不能直接大量食用。豬油和肥肉盡管含銅量不太高,但是因?yàn)槠錇轱柡椭舅崆液休^高膽固醇,本病患者也不宜食用。

4.禁止使用銅制的餐具和炊具,瓜果一定要去皮食用,(表皮含銅量高且可能殘留農(nóng)藥)盡量食用天然食物,少食加工后的成品食物(因含太多不利于健康的防腐劑、色素、香精等添加劑,且加工設(shè)備可能含有銅制零部件)

5.此外,有肝硬化門脈高壓的本病患者(如伴有腹水、脾大及嘔血黑便史者),宜食用流質(zhì)或半流質(zhì)低銅低鹽飲食,且要少量多餐,細(xì)嚼慢咽,避免食用油炸、有渣、有刺或碎骨的飲食,以免誘發(fā)上消化道大出血。
