1、栲栳栳中英文翻譯栲栳栳Kaolaolao典故傳說:栲栳栳(kololao)是山西高寒地區(qū)(主要是大同、呂梁、忻州等地區(qū))用莜面精工細(xì)作的一種面食小吃。栲栳是用竹篾或柳條編制成的一鐘上下粗細(xì)一致的圓框,形狀象斗,是農(nóng)家專門用來打水或裝東西的一鐘用具,也叫笆斗。莜面栲栳栳制法、名稱來歷,可以追溯到1400年前的隋末唐初。民間相傳,唐國公李淵被貶太原留守,攜家眷途經(jīng)靈空山古剎盤谷寺,老方丈特制了這種莜面食品以款待。李淵問:“手端何物?”老方丈答:“栲栳栳”。栲是植物的泛稱,栲栳指用竹篾或柳條成的盛物器具(辭海)。后來李淵當(dāng)了皇帝,便派老方丈到五臺山當(dāng)住持。老方丈帶領(lǐng)眾僧赴任,路過靜樂縣,看莜麥初收,

2、便把莜面栲栳栳制法傳給當(dāng)?shù)?。再后來這種民間面食傳遍了晉、陜、蒙、冀、魯?shù)鹊?,成為北方山區(qū)人民的家常美食。民間還有一種說法,相傳李世民父子在太原起兵,用的就是這種面食犒勞三軍,一舉建立大唐王朝,栲栳是由犒勞一詞流變而來。雖是民間傳說,但莜面栲栳栳在山西民間除了是家常美食外,確實還有犒勞親朋貴賓之意。在雁北和呂梁山區(qū),人們賦予吃莜面栲栳栳以“牢靠”、“和睦”等美好象征。每逢老人壽誕、小孩滿月或逢節(jié)待客,多以此進(jìn)餐。山區(qū)有些人家婚配嫁娶時,新郎新娘也要吃,意謂夫妻白頭到老。年終歲末時更要吃,以祈全家和睦、人運亨通。Legends and allusions: Kaolaolao is a kind

3、of snack made from naked oats which usually can be found in high altitude places of Shanxi province (mainly in Datong City, Lvliang City, Xinzhou City). Kaolao is a cylinder like food steamer, normally with a diameter about 12 inches, which is made of bamboo or willow twig. It can also be used to fe

4、tch water or other things, and it also be called Badou. The origin of Kaolaolao can date back to the end of Sui Dynasty and the beginning of Tang Dynasty, which is more 1400 years from now. It was said that Liyuan was degraded as the mayor of Taiyuan City in Sui Dynasty, and when he and his family w

5、ent by a temple, the monks leader treated them with a special food made from naked oat. Liyuan asked, “whats this?”, and the leader monk answered, “Kaolaolao”. Later, Liyuan became the emperor of Tang Dynasty, he made the food famous.In ancient China, Kao is the general name of plant, and Laolao is

6、a special container made of bamboo or willow twig. Later Li Yuan became the emperor of Tang Dynasty and the appointed the lead monk as the president of the Wutai Temple. When the lead monk and his prentices passed Jingle County, they saw the farmers harvesting the naked oats. Then he taught the loca

7、l people the making process of Kaolaolao. Since the food is very delicious, it was spread to many places of Shanxi and other provinces around north China. After that, Kaolaolao became a kind of home-cooked favorite in mountainous regions.There is another version of the origin of Kaolaolao. It is sai

8、d that Li Yuan and his sons staged an uprising in Taiyuan City, and before setting off, they treated the solders with Kaolaolao. Then they overthrew Sui Dynasty and set up Tang Dynasty. Since “treat” in Chinese is “犒勞” whose pronunciation is “kaolao” which is the origin of the name Kaolaolao. Althou

9、gh this version is only a folklore, Kaolaolao is really a great food to treat gusts. In mountainous regions of Lvliang City and north of Yumen Pass of Shanxi Province, people regard Kaolaolao as best wishes for their lives, such as happiness, kind, etc. It is an indispensable food for festive activi

10、ties to treat gusts. When people get married, both the bride and the bridegroom should eat it to wish a lifelong marriage. The taste is rough, chewy and rustic flavour, usually served with a special sauce. 制作方法:一和面,二搭卷,三火候。和面必須沸滾開水,稍晾揉成光滑面團(tuán);趁熱搓條、揪塊,放在光凈的石板上,用手掌推出形如人舌又薄又勻的長片兒,接著用手指往起一挑搭即成圓筒形,一個挨一個整齊地排立在蒸籠上,象蜂窩一樣,蒸10分鐘即熟。莜面栲栳栳的制做工序非常嚴(yán)格,和面一般是由體力較好的小伙子負(fù)責(zé),加以燒開的水,用搟面棍攪拌成面團(tuán),必須趁熱將其揉精。接下來的工序由女師傅在

13、光滑的石板上將小莜面團(tuán)一揉、一搓,再往手指上一繞,便做出了一卷卷的莜面栲栳栳。Making Methods: The first step, knead dough; second, make rolls; third, steam the rolls.
