Retailersmustshoulderalargepartoftheblame.Theillusionofplentytheyliketofoster,byconstantlyrefillingshelvesandensuringthereisalwaysmorefoodthancanbeboughtinaday,comesinforanexcoriatingattack.Thesepractices,inturn,forcesupplierstooverproduceforfearthatiftheretailerrunsoutofaproduct,theywillbeheldtoblame.
Ifthissoundslikepooreconomics,itisn't.Foodhasbecomesocheapinmostdevelopedcountriesthatretailersmakemoreprofitfromsellingonemoresandwichthantheylosefromthrowingitinthebinifitremainsunsold.Soover-stackingtheshelvesisano-brainer.
Foodproducersplayalongbecausetheyneedtokeeptheircontractswithretailers,andtheyincorporatethecostofwasteintotheirproducts.
