到中國的旅行者最初的印象之一，是中國人的飲食極端儉樸。眾多的人口似乎僅僅依賴種類很少的食品維生，諸如稻米、各類豆制品、谷子、蔬菜和魚。這些食品，和其他一些很少的東西，構(gòu)成億萬人的主要食物，只是過節(jié)或逢有特殊事情，才加一點兒肉。

現(xiàn)在，很多人注意到西方世界設(shè)法為窮人提供價廉物美的食品，但是也不能不關(guān)注這樣一個無可置疑的事實，那就是在平常年景，中國能夠以每天不到兩分錢的價格為每個成年人提供足夠量的營養(yǎng)食品。甚至在饑荒年月，成千上萬的人連續(xù)數(shù)月以一天價值不到一分半錢的定量分配維持生命。這表明中國的烹飪技術(shù)普遍達(dá)到了高水平。雖然對于外國人來說，似乎經(jīng)常覺得中國人的食物是低劣、粗糙、乏味甚至倒胃口的，然而卻不能不承認(rèn)在飲食和服務(wù)方面，中國人是有經(jīng)驗的烹調(diào)師。在這一點上，溫格洛夫·庫克先生把中國人排在法國人之下，英國人之上。中國人是否應(yīng)排在任何一個國家之下，我們決不像庫克先生那樣確定，不過他們在一些國家之上卻是無可爭議的。
